Before I went gluten free ten years ago, I was a baking fiend. I seriously baked mall pretzels that tasted just like mall pretzels and I wanted to eat them always. But then I discovered I was gluten intolerant (self-diagnosed) and suddenly baking lost its appeal. I couldn’t figure out how to make baked goods actually taste good!
Thankfully with the all-purpose flour you can now find in stores, it’s a lot easier to make yummy GF treats. In fact, I can just substitute GF flour into almost any recipe and it’ll turn out good.
But today I want to share four of my FAVORITE recipes. These are ones that just shine for the gluten free among us.
Grain-Free Blender Bread by Danielle Walker (Against All Grain)
This is just…OH MY WORD. It’s the most incredible, moist gluten-free bread recipe I’ve found. Perfect for sandwiches, or just a small snack. Plus it’s super simple to make and high in protein, since it’s primarily made of…wait for it…eggs and nuts! In your blender! That Danielle Walker. She’s got some good stuff.
Granola Balls
I wish I could credit the creator of this recipe, but sadly I have no idea where it originated! I got it from my sister-in-law, who got it from a friend… You get the picture. That being said, it’s the most addictive little dessert-snack, and again it’s got hidden protein, so you feel good about eating it. Here’s the recipe:
1 C. dry oats
1/2 C. chocolate chips (or more!)
1/2 C. peanut butter
1/2 C. ground flaxseed meal
1/3 C. honey
1 tsp. vanilla extract
Mix the ingredients together and roll into balls. Let them sit and harden on wax paper, then eat. They store great in the fridge and/or freezer.
Healthy Gluten-Free Apple Crisp by Kathryne Taylor (Cookie and Kate)
This is SUCH a creative apple crisp recipe, and gets rave reviews every time I make it! The secret ingredient (in my opinion) is using plain full-fat Greek yogurt in the topping! Absolutely amazing.
Easy Gluten-Free Banana Bread by Audrey Roberts (Mama Knows Gluten Free)
Not only is this recipe gluten-free, but it also has a dairy-free option! And it’s nut-free too, which is ideal since my daughter is allergic to dairy and nuts. Plus it’s super easy and it tastes absolutely amazing! I do make one small change to the recipe though, which is adding a bunch of chocolate chips to the batter before baking. SOO YUUUM.
