I’ve been SEARCHING for vegan, gluten free, nut-free (other than coconut) waffles, and have FINALLY found them!! Plus they have 30g+ of protein in the recipe!! Most eg I tried were too moist and gooey, but these are just perfect. My 4yo calls them “the good waffles.”😂
This recipe is based off Spice Up the Curry’s “Eggless Waffles (+Vegan)” recipe, but with a few twists of my own!
Ingredients
1 cup gluten free all-purpose flour (like King Arthur brand)
1/4 cup KOS Vanilla Plant Protein Powder
2 tsp baking powder
2 Tbsp raw sugar
A dash of salt
2 Tbsp olive oil
2 tsp vanilla extract
1 1/2 cups ripple milk (kid’s unflavored version)
Directions
Mix together the dry ingredients, then add the wet ingredients. Sometimes you might need to adjust the amount of milk to get it to the perfect texture for waffles. Then mix it all together until smooth and add to your waffle iron! They cook quickly in my iron.
The protein powder and ripple milk add about 30g protein to the recipe, while still keeping the taste and texture of a regular waffle!
